Perfect for a cold winter's day.

~Roasted Tomato Bisque~

Nothing warms you better on a cold winter's day than the smell of juicy tomatoes, sweet onions, and mellow garlic roasting in the oven.

What I used:

  • 3lbs of sweet Heirloom tomatoes
  • 3lbs of Rome plum tomatoes
  • 2 large Vidalia onions
  • 6-8 garlic cloves
  • 4tbsp of virgin coconut oil
  • 28oz of chicken stock (or vegetable stock)
  • 1 can (14oz) of coconut milk
  • 1/2tsp dried basil

Preheat the oven to 350 degrees. Core and halve the tomatoes. Slice the Onions. Shuck the garlic cloves. Put them all in a giant roasting pan.

Scatter dollops of coconut oil over the top. Sprinkle with kosher salt and freshly ground black pepper.

Roast in the oven for an hour, or until the tomatoes are beginning to caramelize.

Pour the contents of the roasting pan into a large stock pot. Pour the chicken or vegetable stock over the caramelized mixture until the tomatoes are covered.

Puree with a handheld immersible blender (alternately, a food processor or blender can be used for this step, but it will be hot!).

Once smooth and blended, add one can of coconut milk and basil. Add salt and pepper to taste.
